Canadian Culinary Federation – Victoria Branch
The Canadian Culinary Federation (CCF) was founded in 1963 and incorporated in Ottawa as a non-profit association in 1972. Since its inception, the federation has enjoyed a deep and long-standing tradition as Canada’s true representation of the professional chef and cook.
Chef Steve Walker-Duncan

Born and raised in BC, Steve began his professional cooking career in Victoria in 1983 before relocating to the UK in 1986, where he had the opportunity to work in Spain and the Netherlands. Upon returning to Canada in 2003 he joined Camosun Culinary Arts as a contract instructor to share his knowledge and experience with up and coming young cooks in addition to operating a number of culinary businesses in Victoria. Since 2010, he has hosted the popular television series Flavours of the West Coast and authored an accompanying book of the same name.
Camosun College and their Junior Chef program train chef's in the fundamentals of food preparation in all aspects of a modern industrial kitchen, and gives them the skills needed to work in the restaurant and hotel industry today. Camosun College has partnered with the Culinary Federation - Victoria Branch to provide scholarships for junior chefs to be able to successfully complete their schooling and further their careers.
In 2013 I was given the opportunity to attend Camosun College’s Red Seal Apprenticeship Program. While in level one, I was introduced to the Canadian Culinary Federation as a prospect to win a scholarship, network with local professionals in the industry and have a chance to compete in cooking tournaments. Although I wasn’t chosen as the recipient for the scholarship, I was excited to join the Culinary Federation and attend the Victoria branch meetings. Once I completed my Red Seal Certification, I was able to devote more time to the CF and became a member of their board. I was given the chance to network with chefs from all over North America and to see the larger picture of what the Culinary Federation offers. My involvement with Camosun College and the CF has allowed me to meet more amazing colleagues, gain new skills from workshops and learn about innovative products in the industry.
